Tragacanth is a natural gum obtained from the dried sap of several species of Middle Eastern legumes of the genus Astragalus, including A. adscendens, A. gummifer, A. brachycalyx, and A. tragacantha. Some of these species are known collectively under the common names "goat's thorn" and "locoweed". The gum is sometimes called Shiraz gum, shiraz, gum elect or gum dragon. The name derives from the Greek words tragos ( meaning "goat" ) and akantha ( "thorn" ) . Iran is the biggest producer of this gum.

کتیرا کتیرا هیدروکلوئیدی با کیفیت است که از نظر ساختمان شیمیایی، یک کربوهیدرات آبدوست غیر یکنواخت و بسیار منشعب می�باشد. کتیرا متشکل از دو جزء اصلی تحت عنوان تراگاکانتیک اسید یا باسورین و تراگاکانتین است. باسورین 70 - 60 درصد از کل صمغ را به خود اختصاص داده و جزء نامحلول در آب می�باشد که قابلیت تورم و تشکیل ژل را دارد. جزء دیگر یا تراگاکانتین نیز، در آب حل شده و منجربه ایجاد محلول کلوئیدی می�شود. باسورین یک جزء اسیدی است که بر اثر هیدرولیز اسیدی، قندهایی نظیر دی - زایلوز، ال - فوکوز دی گالاکتورونیک اسید، و مقدار کمی ال - رامنوز تولید می�کند. خواص صمغ کتیرا به مقدار زیادی به باسورین ارتباط دارد ( Farzi et al. , 2013 ) [Y1] .
